Our gluten-free carrot cake recipe is almost the same recipe from from my grandfather but we have substituted our favorite GF flour blend and its extremely hard to notice the difference in taste at all – even my kids couldn’t tell the difference. It is a perfect balance of brown sugar, cinnamon, carrots and crushed pineapple, plus some salty crunch of toasted walnuts and finished with rosettes of cream cheese and vanilla frosting. I promise you will not be disappointed!
